Filets, also known as filet mignons, are considered by many to be the tenderest beef cut.  The filet comes from the tenderloin, a muscle structure that lies on each side of the backbone.  The tenderloin, naturally boneless, is found in both the short loin and and sirloin.

We recommend grilling filets (especially, filets wrapped in a thick slice of bacon).  If you don't have access to a grill, don't worry, filets broiled in a cast-iron skillet are incredible.
